Have you heard of NICE Cream?
(Also called “banana ice cream”) This is a fun banana-based dessert that is becoming more and more popular … but why? Basically all you need to know about it is find out how it can become a sensation. It is very versatile, capable of flavoring chocolate, fruit and nuts (or any combination thereof). It’s dairy-free, low-sugar, you’re better off than regular ice cream AND easy to make, so it’s no surprise that people everywhere are trying. It is called “beautiful” because it is greener than milk and does not prevent animals from producing it.
So what is NICE cream?
The basics alone are frozen bananas, a little milk without liquids, some added flavor and a powerful blender or maybe a food processor. If everything is put in the right proportions, the ingredients will make an ice cream-textured dessert. Why isn’t it just some cocktail, why will it work in MY blender?
All thanks to a special type of fiber: soluble fiber. Did you know that bananas contain about 86% water? It’s incredibly high … so why aren’t they wet or soaked like watermelon? The answer is still soluble fiber. These special fibers in bananas prevent them from freezing in hard, icy solids like popcorn. When you add a frozen banana, there will always be an element of cream. Ice cream is a bit similar, but instead of soluble fiber, fat is used, which due to its texture never freezes quite hard. The small amount of liquid prevents it from becoming a cocktail.
Why can’t I find this stuff in stores if it’s so great?
If a nice cream is so light and you’re much better off than ice cream, shouldn’t it already be on grocery store shelves? You might think so, but there’s only one problem holding back the company: that of mixing a nice cream before serving creates the texture you want. If you mix it before, then freeze it again, it will become very cool and not suitable. It requires an awkward thawing time that no one wants to wait for … because regular ice cream lacks them. Since no one has patience, no company will give a good cream. Much like sherbet, a nice cream works best when mixed fresh. If you want to, you basically have to do it yourself. Fortunately, the mixing only takes a few minutes, so it can be prepared when you want dessert.
Why is Nice-Cream better than ice cream?
Lactose intolerant?
No problem. You get a creamy ice cream texture, but no dairy products.
It can be fat free
Ice cream without fat or low fat can be funny. Because it is the basis of bananas, not milk, it is naturally fat-free. Nothing had to be reduced or extracted. Of course, if you want, you can bring healthy fat with peanut butter.
It does not need to add sweeteners
The fruit itself is quite sweet, and bananas are no exception. They have a great blend of sweet and fibrous ingredients. When you add other fruits like blueberries, raspberries or strawberries, they are also sweet. Nice Cream doesn’t need a lot of fructose corn syrup or sugar to taste great. Also … if you really want it to be sweeter, you’re in charge: you can add squeezed stevia or raw local honey (an allergy fighter!).

Forget those little nuggets of artificial color and flavor mixed with typical ice cream to make it easier to consume. When you make a beautiful cream, the vibrant colors and flavors of real fruit will always be within reach. A whirlpool of strawberry bananas? Of course. You control an almost endless taste
Want something exotic you can’t find on grocery shelves? A beautiful cream covered you. You can make a mango with fresh lime peel, peanut butter chocolate … or almond butter chocolate mixed with real nuts. It can be hard to find a blueberry-banana … ever when a grocery store gave you a strawberry-blueberry-banana? (It’s a great combination) Bananas have a mild flavor that is easily masked by other, stronger flavors. You choose whether you want to highlight it or push it completely to the background.
Start: the main recipe
This will make several servings of the basic chocolate pleasant cream. This allows you to see how easy it is, and then you can create your own recipes or browse the web more extensively.
2 frozen bananas (peel them green, wrap in plastic wrap, then freeze for easy use)
2 tablespoons selected almonds / rice / cashews / bananas or non-dairy milk
1 tablespoon almond butter (unsweetened)
1 teaspoon chia seeds
1 tablespoon unsweetened cocoa powder
If you want to eat a nice cream, just mix the whole list above to a homogeneous mass and you’re ready to serve. You will need a strong mixer or food processor as this is a “dry” recipe. Stir / pulse several times to obtain the required consistency. Don’t be tempted to add extra liquid, otherwise it will become a cocktail. (not scary, but not what you want)
Don’t stop here though!
Basic chocolate is just the beginning, continue to explore the possibilities with other fruits or skip the chocolate and use frozen blueberries. Put PB instead of AB, and sprinkle a few mini chips – the list goes on and on … and so will the fiber. Thanks to processed foods, most people do not get enough fiber per day. And no one ever considers dessert a “high-fiber dish” … but that can replace it. The healthy fruit (not the juice), bananas, and chia seeds in the pleasant cream make up a healthy fiber dose.
